Fleck first described the antiseptic effect of benzoic acid when he was seeking an acid to replace the familiar salicylic acid, and he established the antiseptic effect of this substance. Because the safety study of sodium benzoate was not deep at that time, and the production technology was not mature enough, it was not used for the first time in food preservation until the beginning of the century, and since then, because of its low price it has become the world's most used Since then, it has become one of the most used preservatives in the world because of its low price.  Sodium benzoate, also known as sodium benzoate, is a food preservative commonly used in China's food industry, odorless or slightly benzoic odor, sweet and astringent.  It is stable in air and can absorb moisture when exposed to air.  It exists naturally in blueberries, apples, plums, cranberries, cranberries, dried plums, cinnamon and cloves, and its bactericidal property is weaker than benzoic acid, and the bactericidal power of 1.180g of sodium benzoate is equivalent to about 1g of benzoic acid.
